Oceania Cruises Marks 15 Years of Its Culinary Center

by Julie Bouchner November 21, 2024
written by Julie Bouchner

Oceania Cruises marks 15 years of The Culinary Center, the first hands-on cooking school at sea, with new classes for 2025 and beyond.

Originally launched with Marina, The Culinary Center is now featured on Riviera, Vista, and the upcoming Allura, set to join the fleet in Summer 2025.

To celebrate this milestone, Oceania Cruises is introducing new culinary classes for 2025 that focus on dishes from the Pacific Northwest, Polynesia, and Australia. The Culinary Center offers over 60 classes in custom-designed teaching kitchens with professional-grade tools. Guests can explore a destination’s culture and cuisine or enhance their culinary skills under the guidance of skilled Chef Instructors.

Chef Kathryn Kelly, the Director of Culinary Enrichment and founder of The Culinary Center, leads a team of 11 Chef Instructors. She also develops the Culinary Discovery Tours, chef-led excursions in over 40 destinations, allowing participants to shop for local ingredients and learn about regional cuisine. New chef-led tours for 2025 will be announced soon.

“We are the only cruise built by foodies, for foodies. Food is at the heart of everything we do at Oceania Cruises – we have literally built our ships around the culinary experience, from vast galley spaces to an unparalleled range of restaurants. I am so proud to say we were the first line ever to have a hands-on cooking school at sea, and the popularity of The Culinary Center shows no sign of abating. This is testament to the incredible work done by Chef Kelly and her creative team, as they continue to drive our culinary legacy,” said Frank A. Del Rio, President of Oceania Cruises.

The Culinary Center team resides globally, from Christchurch, New Zealand, to Riga, Latvia, and San Francisco, California, keeping them connected to culinary trends.

The Chef Instructors have diverse backgrounds, including experience as Julia Child’s executive assistant, executive chefs for shows like “Sesame Street” and “30 Rock,” and leading culinary programs for major companies like Google and Amazon. With graduates from top culinary institutions, guests can learn from industry experts.

Chef Kelly added: “It’s been an amazing evolution over the past 15 years, from the first Culinary Center aboard Marina, followed by Riviera, to the even more expansive Culinary Centers on board Vista and her sister Allura, which have twice the number of individual stations. I am thrilled to be working with such a creative and collaborative team as we constantly look for new dishes and class themes to introduce to our curious guests.”

New Classes for 2025

Culinary Northwest Passage
Explore the Pacific Northwest’s food culture, focusing on seasonal ingredients, fish and seafood fundamentals, and “deep dish” desserts.

Down Under Abundance
Discover the culinary offerings of New Zealand and Australia, emphasizing diverse seafood and meats and the region’s unique flavors.

It’s a Dessert Party
After dinner, join a dessert class featuring treats like lava cake with Champagne or crêpes Suzette with a Grand Marnier spritzer.

South Seas Salt Life
Experience the fresh flavors of Polynesian cuisine with influences from French and Chinese cooking, enjoying grilled seafood and fruit drinks.

Snow Days Brunch

Eric Stonestreet Named Norwegian Aqua Godfather

by Julie Bouchner November 20, 2024
written by Julie Bouchner

Actor Eric Stonestreet has been named the godfather of Norwegian Cruise Line’s new ship, Norwegian Aqua, set to launch in April 2025!

On April 13, 2025, in Miami, he will participate in the traditional ship christening by breaking a champagne bottle across its bow, a maritime custom that symbolizes bringing good fortune to the vessel and its passengers.

“We are very excited to officially welcome Eric Stonestreet to the NCL team!” said David J. Herrera, President of Norwegian Cruise Line. “We had an amazing time with Eric on one of our ships, and also got to spend some time with his charming family after. Over the past couple of months, Eric has become a true friend of NCL. Eric’s authenticity, wit, charm and genuine desire to bring happiness to the masses embodies the role of godfather for Norwegian Aqua, as well as who we are and what we stand for as a company. We are honored to have Eric as the godfather of Norwegian Aqua!”

ABOUT STONESTREET

Eric Stonestreet is a well-known actor, recognized for his role as Cameron Tucker on “Modern Family,” which earned him two Primetime Emmy® Awards for Outstanding Supporting Actor in a Comedy Series. He has also appeared in films like “The Secret Life of Pets” and “Identity Thief,” and previously hosted Fox’s “Domino Masters.” Currently, he stars in season two of “The Santa Clauses,” one of Disney+’s top original series.

“Traveling the world to meet new people and explore new places is something I love to do, and after recently experiencing what Norwegian has to offer, I can attest that Norwegian truly makes it easy to do more of what I enjoy while on vacation,” said Eric Stonestreet, two-time Emmy® Award-winning actor. “I am honored to be named the godfather of Norwegian Aqua and to play my part in the journey of bringing this new ship to life. I am blown away by what’s in store for Norwegian Aqua and I cannot wait to take a ride on the Aqua Slidecoaster, indulge in some red curry at the all-new Sukhothai and most importantly create lifelong memories with my own family while on board this innovative new ship.”

NORWEGIAN AQUA HIGHLIGHTS

After its christening voyage, Norwegian Aqua will sail seven-day itineraries from Port Canaveral, Florida, starting April 26, 2025. Destinations include Puerto Plata, Tortola, St. Thomas, and Great Stirrup Cay, NCL’s private island, which will have a new pier by late 2025.

Following her inaugural season, Norwegian Aqua will offer five and seven-day Bermuda voyages from New York City from August to October 2025 and May to October 2026. It will then return to Miami for Eastern Caribbean itineraries from October 2025 to April 2026 and November 2026 to March 2027.

As the first ship in NCL’s Prima Plus Class, Norwegian Aqua will feature the Aqua Slidecoaster, the longest and fastest slide at sea, alongside the Glow Court sports complex and the Aqua Game Zone. It will also introduce NCL’s first Three-Bedroom Duplex suites in The Haven, which offer a sundeck, infinity pool, and lounge. Dining options include the Thai restaurant Sukhothai, the plant-based Planterie, and Swirl Wine Bar.

MORE AT SEA PACKAGE

NCL’s More At Sea™ package, available for sailings starting January 1, 2025, includes an unlimited open bar, specialty dining credits, faster Wi-Fi, $50 shore excursion credits, and free airfare for the second guest, with third and fourth guests sailing free on select cruises. This package can be combined with NCL’s Black Friday sale of 50% off all cruises.

Ship Review: Sea Cloud Spirit

by Judi Cuervo November 19, 2024
written by Judi Cuervo

I’m standing on the weathered wooden deck of the 136-guest Sea Cloud Spirit, shielding my eyes from the blinding sun as I gaze upward at the riot of 28 billowing sails that are propelling us under wind power alone across the impossibly blue Caribbean Sea.

If it weren’t for the fact that I had been dancing on deck last night to Van Halen’s “Jump” and watched the Olympics opening ceremony stream live into the ship’s Atlas Lounge the other day, I could almost believe that I have been transported back to the 19th century and the Age of Sail.

YESTERDAY…AND TODAY

Launched in 2021, the three-mast, full-rigged, five-deck Sea Cloud Spirit is, indeed, an anomaly in today’s world of cruising. This 453-foot marvel captures the days of yore while at the same time incorporating modern extravagances like opulent balcony cabins, a lavish wellness and spa area, a swimming platform, a well-equipped ocean-view fitness center, and the most sophisticated navigational technology (which guests can see for themselves, thanks to Sea Cloud Spirit’s “open bridge” policy).

Sea Cloud Spirit is the newest entry into the German-based Sea Cloud Cruises’ fleet of three windjammers that, until recently, were marketed almost exclusively in Europe. Best known for the original Sea Cloud (built in 1931 as the private yacht of cereal heiress Marjorie Merriwether Post and still sailing today), Sea Cloud Cruises added the 94-guest Sea Cloud II to the fleet in 2001 and now, with Sea Cloud Spirit, hopes to lure American guests to the elegance and romance of an authentic sailing adventure.

And I do mean authentic. Unlike the automatic sails that adorn other sailing ships in the cruise industry, the billowing sails above me are set by hand just as they were centuries ago.

ON SAIL

It is 9:00 a.m. when the action begins. Guests assemble on deck and gaze wide-eyed as 19 male and female sailors scurry up the ship’s masts like a determined band of tightrope walkers, positioning themselves within the maze of rigging to manually unfurl and position the 44,100 square feet of heavy canvas sail. The climb down from the masts is just as chilling and I’m surprised to learn from a crew member that it is the newbie deckhands who are tasked with the job at the mast’s highest point — nearly 200 feet above the waterline — in order to acclimate them to the task.

Nearly half of all Sea Cloud guests are themselves sailors or have an association with the sea so it’s not surprising that Sea Cloud Spirit offers them an opportunity to get even closer to the action. That’s right! After passing a brief physical with the ship’s doctor, the bravest among us may slip into a harness and climb the mast, scaling the ropes and ladders, accompanied on the climb by an experienced deckhand leading the way and one bringing up the rear. Meanwhile, Sea Cloud Spirit’s Photo Safari offers a less intimidating activity: A Zodiac ride that circles the ship when its sails are majestically unfurled. It’s a photo op that yields highly professional results even for me, a lousy photographer with a four-year-old iPhone.

LUXURY BENEATH THE SAILS

While sailing is certainly the main focus, a voyage aboard Sea Cloud Spirit is no rugged undertaking designed specifically for the hardy adventurous type. Beneath those magnificent Sea Cloud Spirit sails and a deck dotted with winches, ropes, and pulleys, guests find a decidedly luxurious experience that begins with free-flowing Champagne at embarkation.

Sea Cloud Spirit is an all-inclusive experience with beverages (including wine, beer, cocktails, and spirits), gratuities and port fees, dining, and bottled water included in the fare. Thanks to the line’s origins, you’ll find five-star European hospitality throughout and notice that the majority of your shipmates hail from Germany and other European countries, prices for optional items like shore excursions, boutique purchases, and spa treatments are quoted in euros and communications appear in both English and German.

Sea Cloud Spirit’s public spaces are tasteful and elegant. From Old-World touches like the oval-leaded windows, gold-trimmed sconces, and golden-framed nautical paintings of the ship’s formal dining room to the living-room ambience of her ocean-view library (books in both English and German), and the sophistication of the Atlas Lounge with its polished Steinway & Sons grand piano, the overwhelming feeling is that of a comfortable country home. Yet the ship’s nautical nature is always nearby, particularly at the Lido bar and bistro, a covered alfresco dining, drinking, and dancing spot, where those breathtaking sails are just an upward glance away.

A TASTE OF SEA CLOUD SPIRIT

Sea Cloud Spirit’s European roots are a delicious inspiration for much of its dining with rich soups, innovative salads, hearty cuts of meat, and the freshest seafood taking center stage (and, where maritime laws permit, some of that seafood will have been caught directly from the ship that morning, fileted, and grilled right in front of you). Vegetarians have their own selections at each meal.

Even at lunchtime buffets, usually served outdoors at the Lido Bistro, it’s doubtful you’ll find American-style “grab and go” selections like sandwiches and pizza but, instead, more formal dishes like luscious paella with shrimp the size of lobster tails, carved roast turkey, grilled filet mignon, or absolutely scrumptious bacon-wrapped pork loin. Even a barbecue dinner, served on deck, eschewed typical American favorites like ribs, chicken, and burgers, replacing them with the more elegant grilled sirloin or ribeye steak and tuna three ways: tartare, sashimi, and grilled steak.

In the past year, Sea Cloud Spirit has placed a new emphasis on its dining program, featuring award-winning culinary legends serving as guest chefs on certain sailings. In addition to contributing their own mouth-watering dishes to Sea Cloud Spirit menus, they conduct cooking demonstrations, tastings, and interact with guests hungry to learn more about the cuisine and culture of the area they’re sailing.

In January 2025, Sea Cloud Spirit homeports in San Juan and celebrates the island’s culinary culture with a series of sailings that showcase well-known Puerto Rican chefs. In 2026, she’ll return to San Juan to explore the Caribbean and Central America before sailing the Bahamas round trip from Miami on March 26.

The Winter Trains

by Porthole Cruise and Travel Magazine November 15, 2024
written by Porthole Cruise and Travel Magazine

Winter can put the fun of travel on ice … for some. Frozen roads make going by car inconvenient and downright dangerous. Flights can be overcrowded. And hiking — even in delightfully scenic places — can lose its joy fast when your teeth are chattering.

One perfect remedy: The rails!

What can be more exciting than seeing some of North America’s most beautiful places from the warmth and comfort of a luxurious train?

Here are 10 of the greatest rail trips you can book this winter.

10. CASCADE CANYON WINTER TRAIN

In summer, the San Juan National Forest is renowned for its challenging hiking trails. But you can enjoy its magic in the colder months, too. Durango & Silverton’s Cascade Canyon Winter Train departs from Durango, Colorado, and takes you on a five-plus-hour trip around the Cascade Canyon rim alongside the Animas River. There’s history here, too. Abandoned mines left over from the gold rush days can still be seen in the gorgeous mountain landscape.

The train runs from November through May.

9. CALIFORNIA ZEPHYR

Amtrak’s California Zephyr reveals the stunning variety of America’s topography. It leaves from Chicago and takes you on a 51-hour ride through the Great Plains and the American Rockies to San Francisco.

It runs all year long, but you might want to go in November when the first snows begin to fall.

8. THE ADIRONDACK

America and Canada can be seen at their best on this 10-hour rail journey that starts in bustling New York City and goes through the snow-capped Adirondack Mountains, over the Canadian border, and into Montreal. Service was down for improvements for a while but Amtrak has it back up and better than ever as of September 2024.

7. NAPA VALLEY WINE TRAIN

Experience the Napa Valley wine country in style on this 36-mile round-trip train ride from downtown Napa to St. Helena. You can sip some of America’s best wines while watching the beautiful vineyards from your window. Or, in November and December, you can book The Santa Train which features hot cocoa instead of wine … AND, on this one, you’ll get to meet Santa himself.

6. AURORA WINTER TRAIN

This unforgettable Alaska Railroad trip takes you from Anchorage to Fairbanks, where you’ll get a panoramic view of the Alaskan wilderness. You’ll see frozen lakes and majestic mountains, including Denali, North America’s highest peak.  You may also spot regional wildlife like moose, caribou, and bears. But be aware that between December and January, you can only go on Saturdays.

5. THE CANADIAN

Experience the wonder of the Canadian Rocky Mountains on VIA Rail’s mind-blowing route from Vancouver to Banff, Alberta, through Jasper National Park. There’s a stop-over in Maligne Canyon (the deepest in the Rockies), and you can also visit Lake Louise’s Ice Castle during the Ice Magic Festival.  Once in Banff, you can enjoy a relaxing soak in the famous natural hot springs.

4. THE EMPIRE BUILDER

This fantastic two-day ride takes you from Chicago to Seattle through some of the most spectacular scenery in North America — especially when the weather turns icy. You’ll pass Montana’s astonishing .…

Crystal has launched the first Casino de Monte-Carlo at sea aboard Crystal Symphony during a ceremony in Venice, Italy!

This casino is part of an exclusive partnership with Monte-Carlo Société des Bains de Mer (SBM) and will debut on Crystal Serenity on December 18 from Fort Lauderdale. Future ocean-going vessels, excluding expedition ships, will also feature this casino.

“We could not be prouder to unveil the first-ever Casino de Monte-Carlo at sea aboard Crystal Symphony this week,” said Executive Chairman of A&K Travel Group Manfredi Lefebvre. “There was no better choice for a gaming partner than Monte-Carlo Société des Bains de Mer, founded more than 160 years ago and remains a global leader in the casino industry. I’ve known the team for many years and, like Crystal, they are fully committed to delivering upscale experiences that cater to the discerning tastes of travelers from around the world. The future is bright for both of our brands.”

ABOUT THE CASINO

  • The new casino replaces the former Bridge Lounges on each ship.
  • It offers guests a variety of gaming options, including slot machines, Blackjack, American Roulette, and Ultimate Texas Hold’em.
  • The casino on Crystal Symphony features over 1,000 square feet, with 29 slot machines and three live tables.
  • Crystal Serenity will have 32 slot machines and three live tables.
  • The design, led by SBM, reflects the original Le Casino de Monte Carlo ambiance.
  • Guests will have access to Crystal’s premium beverage offerings, including specialty cocktails and a selection of global wines from Avenue Saloon.

A big thank you to our mutual teams for this exceptional and successful collaboration to be continued, on Crystal Serenity and on new Crystal ships to come.”

Cristina Levis, CEO of A&K Travel Group, adds, “After learning how much our guests missed having gaming options onboard, we knew we could maintain the essence of the previous Crystal casino experience while infusing fresh elements into our brand and finding a partner that would ultimately exceed expectations. We are so proud of what we have accomplished in collaboration with Monte-Carlo Société des Bains de Mer. Silversea Launches Antarctica 2024/2025 Season

by Julie Bouchner November 14, 2024
written by Julie Bouchner

Silversea has launched its 2024/2025 Antarctica season, featuring Silver Endeavour on an 18-day voyage to South Georgia, the South Shetland Islands, and the Antarctic Peninsula!

From October 29, 2024, to March 10, 2025, the cruise line will operate three ships, offering 34 voyages during the austral summer, showcasing one of the most extensive Antarctica experiences in luxury expedition travel.

“We are delighted to return to Antarctica for our 2024/2025 season, sailing to many of the Polar Region’s most spectacular corners,” said Bert Hernandez, president of Silversea. “As industry pioneers, Silversea has a history of leadership and innovation in experiential luxury polar travel. On a recent scouting trip, our teams identified a total of 22 new landing sites, bringing Silversea’s total Antarctic landing sites up to 80 — meaning guests benefit from one of the most diverse expedition experiences available. With our 150-room hotel in Puerto Williams opening at the end of 2025, we are set to enhance our industry-leading Antarctica offering and continue to push industry boundaries to deliver a lifetime of vacations to our guests.”

Antarctica Expedition Options

  • Silver Endeavour, Silver Wind, and Silver Cloud will offer six- to 22-day Antarctica voyages during the 2024/2025 season.
  • Silversea’s six-day Antarctica Bridge fly-cruise option allows guests to avoid the Drake Passage for a quicker journey while maximizing time in Antarctica.
  • The 10-day sailings from Puerto Williams provide approximately six days in the region, while a 12-day option explores deeper into the Polar Circle. Longer 15- to 22-day expeditions offer immersive experiences in Antarctica and the Southern Ocean.
  • Highlights from Silver Endeavour‘s inaugural voyage include sightings of about 50 orca whales, a rare landing at Baily Head in the South Shetland Islands, home to around 45,000 chinstrap penguins, and visits to South Georgia, Wilhelmina Bay, and Neko Harbour.

New Hotel in 2025

Silversea is developing a hotel in Puerto Williams, Chile—the southernmost city on Earth. This hotel will facilitate easier access to Antarctica for travelers. Guests in the Antarctica Bridge fly-cruise program will fly from Santiago to Puerto Williams and then to King George Island, streamlining their journey.

Expert Guidance in Antarctic Exploration

Since 2008, Silversea has led luxury Antarctica expeditions, offering personalized experiences with a team of up to 28 experts. They provide guided walks to observe wildlife, geological features, and onboard lectures.

One popular topic is Ernest Shackleton and the Endurance Expedition. In December 2022, Nicholas Crane, former president of the Royal Geographical Society, gave talks on polar exploration aboard Silver Endeavour, showcasing original lantern slides from the expedition and insights from Captain Freddie Lighthelm, who helped discover Shackleton’s ship.

Disney Employees Worldwide Honored as Godparents of Disney Treasure

by Julie Bouchner November 13, 2024
written by Julie Bouchner

Disney Cruise Line has named The Walt Disney Company’s cast, crew, Imagineers, and employees worldwide as the honorary “godparents” of Disney Treasure, celebrating over 200,000 individuals who bring Disney experiences to life.

During the Christening ceremony, a ship’s godparent provides a symbolic blessing for the vessel and its travelers, honoring a maritime tradition. In 2022, Disney Cruise Line named all Make-A-Wish children—past, present, and future—as godchildren of the Disney Wish, the sister ship to the Disney Treasure.

“At the core of everything we do at Disney are the dedicated Cast Members and employees who create the magic that brings joy to millions of people around the globe,” said Bob Iger, Chief Executive Officer of The Walt Disney Company. “That’s why we are proud to honor all Disney employees as the godparents of the Disney Treasure. This is our way of paying tribute to the dreamers and doers who continue to tell our stories in the most compelling and innovative ways.”

Inspired by adventure, Disney Treasure will feature new and signature experiences from Disney, Pixar, Marvel, Star Wars, and Disney Parks. Highlights include a Broadway-style retelling of “Moana,” immersive dining inspired by “Coco” and Marvel Super Heroes, a Mickey Mouse-themed water attraction, fireworks at sea, imaginative kids’ clubs, and new lounges based on the Jungle Cruise, Haunted Mansion, and “20,000 Leagues Under the Sea.”

The ship is part of a multi-year expansion of Disney’s fleet, which includes six ships and plans for seven more by 2031, enhancing Disney Cruise Line’s storytelling for families worldwide.

“Every magical guest experience results from the collective effort of tens of thousands of Disney Cast Members and employees,” said Josh D’Amaro, chairman of Disney Experiences. “Because of this outstanding team, Disney creativity, storytelling and service continues to set the standards for the entertainment and hospitality industries around the world.”
