Chefs Making Waves

I just love it when worlds collide!

In this case, I’m talking about my passion for cruising and my obsession with celebrity chefs coming together for Chefs Making Waves, a mouth-watering theme cruise that sets sail aboard Norwegian Gem from Miami to Cozumel on May 5, 2025. This 4-night sailing, presented by Sixthman in partnership with a21 and EBG Solutions, is a celebration of dining and mixology that features some of today’s most recognized chefs: Tom Colicchio, Robert Irvine, Geoffrey Zakarian, Maneet Chauhan, Scott Conant, Richard Blais, and more. 

Celebrity chefs aren’t new to cruising by any means — there’s Carnival and Guy Fieri, Crystal and Nobu, Royal Caribbean and Jamie Oliver, Oceania and Jacques Pepin, and Windstar and the James Beard Foundation, to name a few. But Chefs Making Waves brings together a bunch of our favorites to create a dining extravaganza from stem to stern.

Restaurant Takeovers: Don’t worry! Chefs Making Waves won’t squeeze all of its chefs into one galley to fight over the potato peeler. Instead, each chef (or team of chefs) will be assigned one of Norwegian Gem’s six restaurants, showcasing that chef’s specially curated dinner menu for the duration of the sailing. You simply reserve your favorites — no surcharge — and bring your appetite. And there’s more good news: All guests receive a complimentary Premium Plus Beverage Package, meaning wine, beer and cocktails — at dinner and otherwise — are on the house.

Buffet Spotlights: Alas, it’s not possible to experience all six restaurants during a 4-day sailing. But your favorite chefs’ dishes aren’t limited to those served at restaurants at dinner time. Throughout the day, you’ll find some specially created fare at Norwegian Gem’s Garden Café buffet.

Culinary and Mixology Demos: It’s one thing to watch your favorite chef whip up a specialty on TV and quite another to be right there, entertained and educated as he or she shares the secrets behind their tantalizing creations. And, during Chefs Making Waves, the world of mixology will get the same treatment. Best of all — these culinary and mixology demonstrations require no advance reservations or surcharge and you’ll leave with a copy of the recipe(s) to tackle at home. 

Culinary Conversations: Whether it’s kitchen technique and recipe creation, the restaurant business, or creative approaches to fighting hunger, the chefs making waves aboard Chefs Making Waves are looking forward to sharing their experiences in these intimate sessions. Holland America Line Introduces New ‘Grand Voyage’ Entertainment

Holland America Line is introducing 15 new shows on its 2025 Grand Voyages, starting with the January departures of the Grand World Voyage and Grand Voyage: Pole to Pole.

The cruise line’s 2025 Grand Voyages will feature 15 new productions developed by Blackburn International. The shows will be performed by a cast of eight singers and dancers, each with a distinct theme, including tributes to Carole King, the Carpenters, Eagles, and Fleetwood Mac.

“Holland America Line has never introduced this many shows at one time,” said Bill Prince, vice president of entertainment for Holland America Line. “The Grand Voyages are the longest itineraries we offer and it’s important to keep the entertainment fresh for our returning guests. The new shows are a diverse collection of music genres to appeal to a wide variety of tastes.”

Holland America Line’s Grand Voyages will feature  entertainment and enrichment programs, including:

  • 15 new shows and productions.
  • Guest chefs share their culinary expertise and specialties.
  • Live cooking demonstrations and exclusive dinner experiences at Pinnacle Grill.
  • Enriching activities like dance classes, arts and crafts, pickleball, tai chi, and more.
  • Daily-changing menus in the Dining Room featuring local and regional cuisine.
  • Brunches with regionally-inspired dishes and tasting options.
  • Gala balls, dressy nights, and the Captain’s Grand Voyage Dinner.

In 2025, two Holland America Line ships, Zuiderdam and Volendam, will embark on epic Grand Voyages, taking guests to six continents and 75 ports across 31 countries. Zuiderdam will depart Fort Lauderdale, Florida, on January 4, 2025, for a 124-day roundtrip journey, while Volendam will depart on January 25 for a 133-day voyage. The two ships will meet in Barcelona, Spain, on April 24, celebrating their encounter with a traditional Catalan-themed dinner and deck parties. Guests can also reunite with fellow travelers during an overnight stay in port.

Shorter Grand Voyage Segments Available for Booking

Segments on each Grand Voyage make taking a smaller portion of each itinerary possible. The Grand World Voyage has six segment options:

  • 37 days, Fort Lauderdale to Sydney, Australia, Jan. 4 – Feb. 11, 2025.
  • 55 days, Fort Lauderdale to Singapore, Jan. 4 – March 1, 2025.
  • 42 days, Sydney to Cape Town, South Africa, Feb. 11 – March 25, 2025.
  • 49 days, Singapore to Athens, Greece, March 1 – April 19, 2025.
  • 45 days, Cape Town to Fort Lauderdale, March 25 – May 9, 2025.
  • 20 days, Athens to Fort Lauderdale, April 19 – May 9, 2025.

The Grand Voyage: Pole to Pole has seven segments for guests to choose from:

  • 47 days, Fort Lauderdale to Buenos Aires, Argentina, Jan. 25 – March 13, 2025.
  • 100 days, Fort Lauderdale to Ijmuiden (Amsterdam), the Netherlands, Jan. 25 – May 5, 2025.
  • 42 days, Buenos Aires to Barcelona, March 13 – April 24, 2025.
  • 53 days, Buenos Aires to Ijmuiden (Amsterdam), March 13 – May 5, 2025.
  • 86 days, Buenos Aires to Fort Lauderdale, March 13 – June 7, 2025.
  • 44 days, Barcelona to Fort Lauderdale, April 24 – June 7, 2025.
  • 33 days, Ijmuiden (Amsterdam) to Fort Lauderdale, May 5 – June 7, 2025.

Cruise fares for the 124-day Grand World Voyage start at $27,354 for the entire journey and $4,529 for individual segments. The 133-day Grand Voyage: Pole to Pole has fares starting at $31,199 for the entire voyage and $8,029 for individual segments. All fares are based on double occupancy rates and include port fees and taxes.

Grand Voyage Early Booking Bonus

  • Book by August 19, 2024, and receive an Early Booking Bonus on the Grand Voyage: Pole-to-Pole (133 days) or Grand World Voyage (124 days).
  • Guests will receive up to $8,800 onboard credits and amenities per person for the entire voyage, a free Surf Wi-Fi package, a $500 air credit per person when booking through Flight Ease, and complimentary round-trip airport transfers.
  • Guests booking staterooms in certain categories will also enjoy free luggage delivery service to/from Fort Lauderdale airport and prepaid crew appreciation.
  • Guests booking segments of either voyage will receive up to $1,000 onboard credit per stateroom, a free Surf Wi-Fi package, and free laundry/dry cleaning (in certain stateroom categories).

Oceania Cruises and American Cancer Society Launch Relay For Life at Sea

Oceania Cruises partners with the American Cancer Society to bring Relay For Life at Sea to its guests, crew, and team members, supporting cancer research, patient services, and advocacy efforts.

The cruise line’s new onboard program, “Taste of Victory,” is now available aboard Vista and Insignia and will be rolled out fleetwide in the coming months. The program aims to raise $150,000 for the American Cancer Society by the end of the year.

French Kiss

The City of Light shines brighter than ever this year, illuminating La Seine — as Parisians lovingly call the river that courses through their city’s heart — as France marks a series of magnificent milestones. The Seine itself is the first stage of Paris’ Olympics celebrations, as boats parade international athletes to Trocadero for the XXXIII Olympiad opening ceremonies. Away from Paris, villages near the Seine’s flow to the English Channel locally commemorate the 80th anniversary of D-Day (June 6, 1944) with observances culminating at Normandy’s beaches. Since the Seine lured France’s beloved Impressionists to poise easels along its scenic shores, the country is marking the 150th anniversary of Impressionism with curated exhibits and festivals at riverside sites from Paris to Rouen. For all the festivities, this is a brilliant year to romance the beauty of La Seine on a Viking cruise from Paris to the heart of Normandy and back. 

Parisian Origins

Paris itself is an architectural masterpiece that exudes romantic allure in historic arrondissements from the UNESCO World Heritage community banking the Seine to Place Vendome, Place de la Concorde, Montmartre, Le Marais’ Place des Vosges, and the intimate byways of Saint-Germain-des-Prés. Paris is a stellar hub for Viking’s four 168-passenger longships which have exclusive berthing privileges at Port de Grenelle — a short walk from the Eiffel Tower — and include two overnights at this central locale. Still, it’s worth arriving a couple of days early to stroll the city, cross iconic bridges inevitably dotted with couples lingering in fond embrace, see Impressionists’ paintings of scenes you’re destined to recognize on the Seine River cruise, and relax at a café to imbibe the Parisian joie de vivre.

For art lovers, Le Louvre and Musée d’Orsay showcase the evolution of Impressionism with early works by Renoir, Degas, Sisley, Morisot, Pissarro, Cezanne, and Monet among others who honed their metiérs by painting the elusive, changing light of rural and coastal France. Their first collective showing in 1874 was critically trashed by Paris’ Royal Academy, which preferred classical studio paintings to gauzy images of landscapes and towns impacted by the burgeoning Industrial Revolution, or scenes of ordinary people living daily lives. 

Paris River Cruise

A leisurely walk from Le Louvre through Tuileries Gardens leads to L’Orangerie, home of Monet’s brilliant Les Nymphéas (Water Lilies) cycle, painted at his Giverny estate. For Viking passengers like me, the line’s included visit to Giverny was motivation enough to book this cruise. Others were keen to visit Normandy’s historic beaches.

After embarking Viking Skaga, Captain Pascal Eschbach explained that the Seine — its name meaning “snake” — is France’s second-longest river. Starting at the edge of Burgundy, it flows northwest through Paris, snaking its way through Normandy to the city of Rouen before reaching the English Channel at Le Havre. 

That first night, as passengers gathered on the top deck for Champagne toasts to a joyous journey, I felt the beguiling aura of La Seine, its waters shimmering as the Eiffel Tower sparkled against indigo skies.

Get ready for a magical getaway! Disney and Oriental Land Co., Ltd. (OLC) have announced an exciting agreement to bring Disney cruise vacations to Japan year-round.

Starting in early 2029, OLC will build and operate a Disney-branded cruise business in Japan, bringing the magic of Disney at sea to the region.

“Disney Cruise Line has ambitious plans to bring family vacations and Disney storytelling to more guests around the world than ever before,” said Josh D’Amaro, chairman, Disney Experiences. “We are thrilled to continue the success of this expansion as we collaborate with Oriental Land Co. to introduce another distinctly Disney vacation experience to families and fans in Japan.”

  • Disney and OLC, owner of Tokyo Disney Resort, have expanded their 40-year partnership with a new, locally-based Disney cruise ship.
  • The ship will offer Japanese fans Disney entertainment, dining, and exceptional service.
  • The ship will be built at Meyer Werft in Germany and feature designs from Walt Disney Imagineering.
  • The ship will be similar to Disney Wish, but with modifications tailored for Japanese guests.

An enormous country like Australia has a lot of land to cover, but fortunately, the beautiful eastern coast is easy to explore by rail. This exciting journey involves two legs: Sydney to Brisbane and then Brisbane to Cairns.  A standard long-distance train known as the XPT (“express passenger train”) takes you from Sydney to Brisbane (though it actually starts as far south as Melbourne).  Brisbane was connected to Cairns by an old route known as the Sunlander, which was replaced in 2013 by The Spirit of Queensland.

There’s plenty of beautiful places to stop off along the coast, and it’s perfect for lovers of food, wine, and beer. More than anything, this trip is perfect for animal lovers. Let’s have a look at the journey and the vehicles in detail.

Sydney to Brisbane

The initial leg of the journey is approximately 14 hours and can be done in a day, as trains start from 7:08 a.m. An overnight sleeper is also available for a higher price. Both the economy and first-class cars are air conditioned and access a buffet car selling Australia’s favorite train fare, the Aussie meat pie. Tickets in both classes usually are priced at 50-100 Australian dollars ($33-$67) for a one-way journey, making it a very affordable way to travel interstate. 

The trip takes us to country towns and coastal settlements of Northern New South Wales, throughout the flat floodplains to riversides and seaports along the Pacific Ocean. In the dusk hours, expect to see wallabies and kangaroos bounding around — or simply staring at the train from a distance in stunned silence. 

The XPT power car features a Paxman VP185 12-cylinder, turbo-charged diesel electric engine (1,492 kW or 2,000 horsepower). At each end of the train is a power car, one pulling and the other pushing.

Brisbane to Cairns 

This is the big trip, and is far more opulent than the first leg. From Brisbane’s Roma Street Station to Cairns is 25 hours. A diesel-powered, modern Tilt Train service runs several times a week so it can be split over in two or three days, or you can grab an overnight bed if you’re eager to get to the tropics as soon as possible. 

Economy seats start at around AU$150 and RailBed seats can cost as much as AU$350 per one-way fare. All cars are air conditioned and fully accessible. Economy seats are comfortable and feature entertainment screens, USB power-charging points, and a tray table. RailBeds are more spacious and luxurious seats similar to a business or first class flatbed on a plane. They convert to a bed for overnight travel, and also include bed linen. RailBeds are limited in number so be sure to book the trip well in advance for a high-end experience.

“Good luck.”  My friend’s words dripped with sarcasm when I revealed that I’d be crossing the Atlantic in mid-December.  But she didn’t realize I’d be aboard Queen Mary 2, a massive ocean liner built specifically for the journey.  The ship’s higher power, larger draft, and twice the stabilizers of most cruise ships deliver smooth sailing, all the way from Brooklyn to Southampton.

Cunard’s typical Atlantic crossing is filled with events and activities.  A morning workout at the gym, a treatment at the Mareel Spa, watercolor art classes, dance instruction, lectures, darts or roulette tournaments, morning trivia, and a visit to the ship’s planetarium (the only one at sea) are nice daytime options for those not content to simply select a book from the lavish library on Deck 8, curl up with it, and relax.

But don’t get too relaxed!  Queen Mary 2 comes alive each evening with gala theme nights.  Guests don their red-and-gold finest, a nod to Cunard’s official colors, or slip into a flapper dress for a Roaring 20’s celebration that begins at dinner at one of QM2’s eight dining venues and continues with dancing to live ‘20s music at the Queens Room, the largest ballroom at sea.

If nostalgia isn’t your thing, continue past the Queens Room to G32, the two-level rock/pop club tucked behind it.  Dance to your favorite tunes, perform karaoke, or just watch the action from the packed bar.  I was dancing until 2:00 a.m. at G32 … the latest I’ve lasted on a dance floor since my 20s!

And before booking your QM2 crossing, check out the ship’s event cruises — a number of themed voyages like London Theater at Sea, Literature Festival at Sea, or, this August, a sailing that celebrates Queen Mary 2’s 400th crossing and features ship historian Bill Miller, a lecturer who simultaneously educates and entertains.
