A Taste of Sea Cloud Spirit’s San Juan Guest Chef Program

Sea Cloud Spirit, the 136-passenger, three-masted, full-rigged windjammer from Germany’s iconic Sea Cloud Cruises, is coming to America’s backyard.

Beginning this January, Sea Cloud Spirit will, for the first time ever, homeport in San Juan, Puerto Rico, making it easy for us Yanks to experience her spectacular approach to cruising. At the same time, guests may indulge in the ship’s San Juan Guest Chef series, a specially designed program developed in partnership with Chef’s Dinner Table, a lavish private kitchen and culinary salon located on Mulberry Street in New York City. The onboard program features some of the island’s most distinguished chefs, including Francis Guzman, Wilo Benet, Julie Carrion, and Mario Pagan, along with cooking demonstrations, Don Q rum tastings, and chef-led culinary discussions.

Recently, porthole.com had an opportunity to sample what’s in store for Sea Cloud Spirit guests sailing from San Juan this winter. Amid the urban splendor of New York’s Little Italy, an industrial-looking elevator at 132 Mulberry Street delivered us to another culinary world: homey yet elegant, with an open kitchen beneath elaborate glowing light fixtures, a bar stocked with premium wines and daiquiris, and, in a spacious nook, a stylish dinner table set for 24, its crystal sparkling in the glow of candles resting atop window sills carved into weathered brick.

As members of the intimate gathering sipped their libations, servers circulated, offering delectable canapes like scrumptious guava egg rolls, pesto-drizzled chicken skewers, and bite-sized pork pies. Julie Carrion and her team toiled within the open kitchen, whipping up the dishes that would give us a taste of what we could expect during Sea Cloud Spirit’s January 10-17 sailing.

Chef Carrion, a San Juan native, spent the early years of her culinary career in New York City training under Top Chef Masters’ Anito Lo. She then relocated to Montreal, where she worked with Chef Normand Laprise of Toqué! before returning to New York and a position at the New York Times four-star Restaurant Daniel, working under the iconic Daniel Boulud.

Tonight, it’s obvious that all that experience paid off.

Dinner kicks off with lobster resting atop a creamy pool of guacamole, garnished with hearts of palm and drizzled with passion fruit vinaigrette. A banana-leaf-wrapped pastel follows, dense and delicious, with root vegetables, garbanzos, dates, almonds, and pineapple hot sauce. (The pastel, according to Chef Carrion, is typically reserved for Christmas and special occasions because it’s an ambitious recipe, yet guests aboard Sea Cloud Spirit will tackle its creation at a cooking class led by the chef during her sailing.) The perfectly seared black sea bass is a main course masterpiece, presented as it is on a silky bed of plantain mousseline and topped with a fresh and tender vegetable escabeche and its riot of color.

The meal concludes with a dessert I’ll remember all my life: an intense bittersweet chocolate rum torte beneath a strip of fresh coconut and accompanied by a generous scoop of creamy guava ice cream perched atop a chewy coconut base, the dish adorned with a streak of glittering white chocolate.

The only way Chef Carrion’s dinner could have been better is if it was served under the billowing sails of Sea Cloud Spirit as she sails from San Juan to the Caribbean. And from January 10 through 17, it will be.

The Five Best Cruise Lunches

A hamburger or hot dog from the grill?  How very, very…lunch hour.

And yet, when I cruise, I can’t see myself coming in from a morning under the blazing Caribbean sun to chow down on massive, steaming bowls of beef bourguignon, hot soups, and pasta.  The salad bar is fine until I reach the end of the cruise and often discover that the perky arugula is gone and the base of my salad is tired-looking romaine leaves.  And where did the green olives and cashews go?

So, tuck in your napkin and join me for a taste of my favorite lunches at sea:

OCEANIA:  Hands down, my favorite shipboard lunch option is Oceania Cruises’ International Sampler.  An assortment of dishes related to a different country or region of the world, each day the sampler transports me to the local food market of some of my favorite destinations with small portions of a variety of the area’s delectable signature eats. Today, I may savor the tastes of Greece.  Tomorrow, Italy, India, France, Spain…who knows??  And while the samplers are served only in Oceania ships’ main dining room, which means I have to slip into something a bit more modest than flip-flops and a cover-up, it’s totally worth it!

VIKING OCEAN:  Mmmmmm…Mamsen’s!  Sure, aboard Viking Ocean ships, you can grab lunch at the buffet, the grill or in the dining room but sometimes you just crave the wholesome and healthy—yet undeniably delicious—Norwegian dishes available at Mamsen’s.  Tucked into the corner of The Explorer’s Lounge, this serene space is the perfect setting to indulge in fragrant pea soup (with or without ham), and open-faced sandwiches like shrimp/tomato/cucumber, gravlox and red onion, roast beef and more, each served with its own delectable dipping sauce.  Warm dishes like fish cake on rye are also available.  But don’t feel too virtuous!  Mamsen’s serves its heart-shaped waffles all day long along with an eye-popping assortment of cakes, tarts and pastries.

ROYAL CLIPPER:  This 4,425 grt ton, 152-guest five-masted sailing ship might be a little slip of a thing in today’s megaship world, but when it comes to a superb lunch buffet, she’s mammoth.  Descend the dramatic wrought iron filigree staircase, past the colorful nautical murals, and enter the Clipper Dining Room for superb, usually themed, buffet lunches supplemented by cooking, salad and dessert stations.  Likely, the elegant dining space will be adorned with a riot of decorations reflecting the day’s theme.  Live piano music provides a relaxing, unobtrusive backdrop as guests might dig into an Italian-themed buffet featuring huge and tender calamari in butter and garlic sauce, steamed mussels and shrimp, spinach-and-artichoke-filled filo, crispy rice balls, cooked-to-order pastas and some of the best pizza at sea.  Asian, International, Caribbean and Barbecue themes are just as varied and scrumptious!

CRYSTAL CRUISES:  Feel like a splurge?  Head to the elegantly-lit, wood-paneled Vintage Room aboard your Crystal Cruises ship for an intimate mid-day meal that is any oenophile’s idea of heaven.  With themes that range from Champagne to Tuscany, Spain, California, the Italian Wine Regions and more, count on a menu filled with lavish dishes like Wagyu Beef Tenderloin, creamy and rich roasted tomato risotto alongside an ethereal white balsamic froth, veal scallopini and other gastronomic masterpieces.  Dessert might be a sublime dark chocolate marquise and homemade chocolate pralines.  Between the glorious meal and the free-flowing wines, you just might want to skip dinner…and maybe plan a nice afternoon nap as well!  Priced from $95-$145, guests may reserve their place at a scheduled lunch or even plan their own.

LUNCH ASHORE:  You’ve spent the morning sightseeing or shopping and now it’s early afternoon.  Sure, you could head back to the ship for lunch, but why not immerse yourself in your destination’s culture with a taste of the local cuisine?  Indulge in authentic Paella in Barcelona or maybe pizza in Naples.  The Caribbean tempts with crispy conch fritters beneath a dollop of tartar sauce and Cancun is the place for chargrilled tacos and maybe a refreshing margarita.  Explore the side streets and alleyways until something tickles your fancy.  You’ll be helping the local economy while opening yourself up to a whole world of flavors!

AmaWaterways Introduces AmaKaia and AmaSofia to Fleet

AmaWaterways has announced the launch of two new river ships in 2026!

AmaKaia will sail the Mekong River alongside AmaDara, while AmaSofia will explore Europe’s Rhine and Danube Rivers.

AmaSofia will launch on May 24, 2026, and will be the 24th ship in AmaWaterways’ fleet to sail on Europe’s most popular rivers. Its inaugural 14-night itinerary, Magnificent Europe, takes guests through four countries, following the routes of emperors, kings, and queens from Amsterdam to Budapest. Along the way, passengers will experience immersive cultural explorations, including guided bike rides, visits to local bakeries, and tours of historic castles and palaces.

With 31 departures in 2026, AmaSofia will offer a range of itineraries on the Danube River, including Melodies of the Danube, Romantic Danube, and Christmas Markets on the Danube.

AmaKaia will begin its first seven-night cruise on August 3, 2026, exploring Vietnam and Cambodia’s ancient cultures, regional cuisine, and luxury amenities. The ship will offer two itineraries, Charms of the Mekong and Riches of the Mekong, providing guests with a unique blend of well-known sites and off-the-beaten-path experiences.

Highlights of the cruise will include traditional “xe-loi” rides, visits to local workshops and monasteries, a Buddhist Blessing Ceremony, and insights into regional histories from local experts.

AmaKaia will sail 22 times in 2026 and 38 times in 2027, with land extensions available in cities like Siem Reap, home to the world’s largest religious structure, Angkor Wat.

Swan Hellenic’s Old World Gateways

There’s nothing more stimulating than thumbing through a cruise brochure with an appetizing menu of exciting travel destinations. As I perused the myriad of expedition cruises offered by Swan Hellenic, one itinerary caught my wandering eye. How could I resist the opportunity to explore the treasures of the Iberian peninsula, combined with the rugged beauty of Brittany in France?

Although I’ve visited the ports of Spain’s Costa del Sol numerous times, I’d never had the chance to cruise to the alluring destinations that line the northern coast of the country. An eleven-day itinerary beginning in Lisbon, Portugal, and ending in Portsmouth, England, was exactly what I was looking for.

If you’re not interested in listening to my cruise travelogues, you may not want to invite me over for dinner. With seven decades on this wonderful planet, my cluttered memory bank of travel experiences can sometimes be slow to respond. While I may not recall what I ate yesterday, ask me about the wine we had in Portugal, the charm of Santillana, Spain, or the exquisite food on this Swan Hellenic cruise, and I could write a story about it. (So, I will!)

Let’s start with the ship, the SH Vega, which has a capacity for 156 passengers. This would be my third time enjoying Swan Hellenic’s unique no-fuss, no-formality atmosphere, filled with refined touches that make you feel like you’re in a luxury boutique hotel. The understated Scandinavian design, furnishings, and public areas create a welcoming ambiance that’s enhanced by the hospitality of the amazing staff and crew.

Imagine sinking into the comfort of a virtual reality fireplace at the foot of your bed in a balconied suite, complete with an adjacent sitting area. It’s a true indulgence that validates the boutique feel of the vessel. Every detail is meticulously designed to provide a high-end experience, from the beauty shop and library to the gym, spa, and sauna with stunning views of the passing scenery.

The heated infinity pool overlooking the aft of the ship is another highlight, and it’s all part of the all-inclusive concept that includes free-flowing wine and beverages, complimentary excursions, and gratuities. You won’t have to worry about a single expense.

Swan Hellenic has also focused on gastronomy, partnering with JRE-Jeunes Restaurateurs, a prestigious organization of acclaimed chefs. On select cruises throughout the year, a rising chef will join the ship as a celebrity chef, preparing signature dishes throughout the voyage. The experience culminates with a Gala Dinner that showcases their culinary creativity.

To add to the cultural experiences on this cruise, Dutch Chef Arjan Kuipers was onboard to share his talents with dishes such as Avocado Crab and Crème Fraiche, Grilled Dorado with Green Curry, and other plates of passion. Each course was expertly paired with wines, making for a truly unforgettable culinary experience.

In addition to the exceptional onboard experience, it was the unique itinerary of undiscovered ports that initially drew my attention. A pre-cruise stay in Lisbon allowed me to explore the city’s colorful streets and architecture, as well as indulge in the famous pastel de natas, a Portuguese custard pastry. As we set sail from the port, passing by the UNESCO Belem Tower, the Vega embarked on a voyage of Iberian discovery.

The itinerary was a non-stop parade of ports, offering new insights into history and culture. We strolled along the picturesque riverside promenade of Porto, visited the charming village of Tui and its magnificent cathedral, and explored the UNESCO pilgrimage site of Santiago de Compostela (optional tour).

One of the amenities that make Swan Hellenic so appealing is the complimentary excursions in every port. We took a tour from Ferrol to La Caruna, which offered a glimpse of The Tower of Hercules and Maria Pita Square. La Caruna’s hundreds of windows on the seafront have earned it the nickname “Crystal City.”

We also visited the historic buildings of Gijon, Spain, and sampled the endemic cider of the region, making the visit even more memorable. From Santander, we took a short drive through the picturesque countryside of Cantabria to visit Santillana Del Mar, one of Spain’s most beautiful villages.

Leaving Spain, we navigated northward to Brittany and Normandy in France. We walked along the ramparts of St. Malo and explored the charming streets of Le Mont Saint Michel, experiencing a dramatic change of scenery. In Cherbourg, we learned about the war-time history of Utah Beach in a fascinating excursion to St. Mere Eglise. We finished our 11-day cruise with a visit to the colorful city of Honfleur and an optional excursion exploring the WW2 history of D-Day and Omaha Beach.

Although this classic cruise experience was a departure from Swan Hellenic’s expeditionary-style cruises in the Arctic and Antarctic, it still retained an element of adventure. Our guest lecturer presented enrichment conversations, and we enjoyed complimentary excursions that sought out destinations far removed from traditional cruise ports.

I’ll miss the warm hospitality and 5-star service provided by the staff, but revisiting Swan Hellenic’s brochure of far-reaching destinations has already convinced me to return soon. The intimate size of the 5-star rated SH Vega is perfect for validating the company’s mantra: “see what others don’t.”

MSC Cruises Shares Family Summer Offerings

MSC Cruises is expanding its kids and family program with new entertainment and services this summer. The enhancements include baby services, more family game shows, and expanded hours for kids.

Across the fleet, five complimentary kids clubs cater to different age groups from six months to 17 years old: Baby Club Chicco (6-2 years), Miniclub Lego (3-6 years), Juniors Club Lego (7-11 years), Young Club (12-14 years), and Teens Club (15-17 years). Kids can enjoy complimentary meals, giving parents peace of mind while they explore or relax on deck.

We love creating unforgettable memories and holidays for everyone, especially for families,” said Steve Leatham, Global Head of Entertainment at MSC Cruises. “That’s why we proudly offer a fleetwide family program of entertainment and activities that resonates with our valued guests. UPDATED SUMMER OFFERINGS

MSC Cruises is introducing a range of new activities and services this summer to enhance the family onboard experience. One of the most significant additions is the extended baby care service, which will now cater to babies from six months old. This service is designed to give parents the freedom to enjoy the ship, knowing that their children are being cared for by highly trained staff.

The kids’ club Doremiland will also open its doors to parents on select days, allowing for quality time with kids. Additionally, there will be a daily family party for families to enjoy together.

Two new MSC Original Family Game Shows are being introduced: “World Quest,”” a geography-based trivia game, and “Caravaggio,”” a spy game show dedicated to art. These shows will be popular additions to the family entertainment options on board.

Teenagers aged 12-17 will also benefit from extended club hours, which will allow them more fun and freedom during their vacation. The club will be open from 10 a.m. to midnight on sea days and 3 p.m. to midnight on port days.

Families can also participate in Guinness World Record activities on multiple ships, with a range of record-breaking challenges and quizzes to test their skills.

MSC Foundation Day will be introduced, a daily activity focused on sustainability and environmental topics. This initiative will allow children to learn about important environmental issues and how they can make a positive impact.

Matteo Mancini, Corporate Senior Manager of Kids Entertainment at MSC Cruises, said: “We host more than 600,000 children and teenagers across our entire fleet every year, and we want to make sure every single one of them disembarks having had the best experience. Queen Mary 2 Brings Eternal Flame to New York

Queen Mary 2 arrived in New York today, carrying the Eternal Flame from France after a seven-day North Atlantic crossing.

The ship’s arrival was marked by a commemorative ceremony onboard, honoring the 80th anniversary of D-Day and the WWII Normandy Landings.

In attendance were French Ambassador Laurent Bili, Acting Consul General of France Damien Laban, City of New York Commissioner for International Affairs Edward Mermelstein, Queen Mary 2 Captain Andrew Hall, General Patton’s granddaughter Helen Ayer-Patton, and WWII veterans from The Greatest Generations Foundation.

Queen Mary 2 Captain Andrew Hall said: “We are honored that our flagship Queen Mary 2 was part of this historic occasion honoring the men and women who served in D-Day, and the many hundreds of thousands of whom were brought over the Atlantic on Cunard ships. Today will truly be remembered as an important part of Cunard’s long and storied history.”

The Eternal Flame, which has been burning since 1923, was collected on May 8. Twelve young French ambassadors then carried it from Paris to Cherbourg and across the English Channel to Portsmouth. The flame was then boarded onto Queen Mary 2 and sailed across the Atlantic to New York.

The ambassadors will escort the flame to Arlington Cemetery, where it will be laid to rest at an official ceremony on May 24, 2024.
