Stroll from deck to deck aboard any cruise ship during the holidays, and the wafting aromas are enough to knock your blinking-lights Santa socks off. Fresh-baked Christmas cookies here, latkes there, stuffing everywhere — what’s a foodie to do? Why, indulge, of course. We’ve got the goods (and goodies) you crave during this festive time.

Good Gravy!

Of any holiday meal savored at sea, Thanksgiving may be the trickiest for passengers and chefs. Expectations are high and most of us favor our family dining traditions: Aunt Emily’s cranberry sauce, perhaps, or mom’s pecan pie. Luckily, cruise ship chefs go overboard (only figuratively) to ensure Thanksgiving dinner ticks all the iconic boxes. Take Disney Cruise Line, out to please multigenerational families. Children feel terribly grown-up sipping Turkey’s Trots and virgin piña coladas, all festive with pumpkin syrup and mango puree. Mom and Dad can toast the season with a real adult cocktail dubbed Pumpkin Spice, merrily splashed with vodka, Kahlua, and Baileys.

Disney’s big crowd-pleaser is always the freshly carved roasted turkey, starring trimmings like mashed sweet potatoes with honey and crushed pecans. Just don’t fill up first on the fresh-baked cornbread with chive sour cream dip. Worried about pleasing the vegetarians in your Thanksgiving group? Entrées like pumpkin curry with brown lentils and apple, or pretzel and cashew-crusted tofu with sweet onion chutney, assure veggie devotees that they, too, feel the holiday love.

Latke Love

The buzz is that Oceania Cruises’ Hanukkah dinners taste so stellar, even non-Jewish passengers want in on the feast. Can shipboard potato pancakes taste as good as the latkes grandma fries at home? They might be better. (Plus, no one is stuck scrubbing the oil that splatters all over the kitchen.)

Oceania chefs fashion crazy-good latkes, all crispy-edged golden-brown deliciousness. Check out the creative toppings, which can cleverly include wasabi fish roe. Hats off, also, to the chicken soup; feather-light matzah balls float ethereally in a richly simmered broth. Word is, the fork-tender brisket with porcini mushrooms and onion gravy drives guests so wild, cruisers request it repeatedly as the sail progresses.

The Gingers

Come Christmastime, Cunard Line’s kiddy cruisers flock to gingerbread workshops to decorate houses and cookies, and surely eat a gumdrop or three. Disney organizes similar get-togethers; one for families to design candy-laden gingerbread houses together, and the other solely for wee ones to decorate gingerbread men and gobble up a spare foot when they think no one is looking.

On Crystal Cruises, chefs craft six gingerbread houses, with the biggest, most splendid to be showcased in the Crystal Plaza by the Crystal Dining Room alongside an internationally inspired assortment of cookies. Think freshly baked vanilla kipferl (almond crescents), chocolate chip, meringue, and hazelnut-linzer with apricot jam. Grab as many cookies as you like, whenever you like. I can personally testify to how their buttery aromas beckon.

Your Goose is Cooked

On Regent Seven Seas Cruises, dive into the Christmas Eve spirit with roasted goose. Ship chefs promise crisp crackling skin, and sides of sweet prunes plumped in Armagnac, braised red cabbage, dainty potato dumplings, and rich port wine gravy.

Surely Christmas and eggnog are the peanut butter and jelly of the holiday season; count on Cunard to pour this creamy drink in….

The scene was a cruise ship sailing in the Middle East, but it felt more like a James Bond movie. While guests on the ultra-luxurious 600-passenger Seabourn Encore were sipping martinis and champagne around the pool, four burly armed guards arrived by small motorboat, under the cover of darkness.

The job of the guards was to protect us as we sailed in the Gulf of Aden, and specifically off the coast of Somalia, an area where pirates occasionally attack cargo ships.

We never encountered any pirates — incidents are extremely rare — but the subject was much talked about as we approached the danger area. There had been speculation the guards would arrive by helicopter or even submarine. We got drama, without drama, which was okay with everyone involved.

My husband and I joined Seabourn Encore in Ashdod, Israel, a week into a 21-day sailing from Rome. We cruised through the Suez Canal, around the Gulf of Aden and into the Arabian Sea and Persian Gulf to Dubai.

This is a cruise to see the religious sites in Jerusalem, the rose-hued ruins of Petra in Jordan, items such as gold and frankincense for sale in the souks in Oman, locals covered head-to-toe in traditional garb, and the ultra-modern skyscrapers in Abu Dhabi and Dubai. Exposure to culture different than your own is one of the attractions. You want to visit with Bedouins, hear music you’ve never heard before, try new foods, get face-to-face with camels. But maybe you’re also worried about language barriers and making a faux pas, such as not wearing the appropriate attire or simply acting too American. Cruisers may even find themselves having to explain to friends and family back home why they would want to vacation in the Middle East.

For all that, when the region is stable, the Middle East is a desirable warm-weather spot. Dealing with a little security is a minor hassle.

Add to the intrigue complimentary drinks, cuisine by Thomas Keller, and the extraordinary intuitive service that Seabourn provides, and you get a touch of old Arabia and modern Arabia delivered on a silver platter.

The Suez Canal

One of the lecturers on our ship joked there is such thing as canal collectors, or “canal-holics,” as he called them. Having done the Panama Canal, the Corinth in Greece and the Suez, I may be entering that territory.

Commerce is the main purpose of the 120-mile shortcut between the Mediterranean and Red Sea. Cruise ships convoy through the sea-level, Victorian-era canal with oil tankers and container ships. Getting up early and sipping coffee on our suite balcony at 6 a.m. as we entered the canal may have been overkill. It takes a full-day to slowly traverse the Egyptian waterway. But if you get into the rhythms, what unfolds is surprising.

As we cut through the Sinai, there was sand — lots of sand — but also views of the verdant green of the Suez Delta. As we passed settlements, there were mosques and minarets, and our ears filled with the melodious sound of the Islamic call to prayer, broadcast over loud speakers.

We smelled wood burning, heard dogs barking, and viewed armed guards at military outposts. Fishermen greeted us by banging on their boats. We passed Egyptian war memorials and under the modern expanse of the Mubarak Peace Bridge, built with the help of the Japanese government. When we approached the widening at Great Bitter Lake, there were commercial ships as far as the eye could see.

Cruisers of Arabia

In Jordan, our ship docked in Aqaba, which fans of the 1962 movie Lawrence of Arabia will recognize from the dramatic battle scene; the real T.E. Lawrence helped capture the city in 1917).

The big attraction in the area is Petra, a rock-carved ancient city and UNESCO World Heritage Site. After touring, Seabourn guests who ventured there were surprised with a treat of caviar and Champagne.

For those of us who had been before, another excursion was open-air truck exploration of Wadi Rum, where Lawrence hung out among the red rock formations. Bedouin-led camel rides (for an extra $20) were the surprise here, and afterwards guests refreshed in a big tent, sipping strong coffee and munching on dates while watching a man energetically dance with a dagger.

That night, at a deck party, we too danced — to hits by The Rolling Stones and….

10 Things About A World Cruise That Keep Guests Coming Back

Ever since before the time of Ferdinand Magellan, people have been dreaming of, and trying to, circumnavigate the planet. And no wonder! Doing a circle around the globe, visiting scores of exotic places and experiencing a variety of cultures – in just one voyage –makes anyone feel like a superhero. In modern times, cruise passengers can go around the world in floating palaces that not even Magellan could have foreseen – can you imagine that great explorer soaking in a hot tub?

Each winter, several cruise lines feature world cruises – among them Crystal, Cunard, Holland America, Princess, Oceania and Silversea. I have done four on Holland America’s Amsterdam and am booked in the next one, a 113-day voyage setting sail from Fort Lauderdale on Jan. 22, 2019 (and I have also booked that ship’s 2020 Grand World Voyage). Why do I keep taking them? Here are 10 things that make a World Cruise like a potato chip – you can’t have just one:

1) The first day. That incredible feeling that one gets after being pampered, entertained and well fed all day and knowing that you have 100-plus more days like this one ahead to enjoy.

2) The overnights and extended stays in ports. World Cruises offer a number of these so guests can explore more extensively in various ports and regions. Our next World Cruise on the Amsterdam features seven overnights and three extended stays when the ship remains in port until 10 p.m. or 11 p.m. in such exotic locales as Papeete, Tahiti; Vaitape, Bora Bora; Bali, Indonesia. We make the most of overnights and extended stays by booking rooms and/or overwater bungalows perched on turquoise lagoons in such idylls as the Four Seasons Bora Bora, the InterContinental Tahiti Resort & Spa, the InterContinental in Moorea, the Taj Mahal Palace in Mumbai, India, and the Four Seasons Bali at Jimbaran Bay – the latter designed as a traditional Balinese village and featuring authentic cuisine, crafts and other cultural enrichment.

3) On Location program. This Holland America program brings the history, culture and flavors of a destination onboard ahead of, and during, the visit. For example, on past voyages a Polynesian team was put on a week ahead of our arrival in Tahiti and they provided ukulele-playing lessons, classes on Tahitian crafts, dance lessons and performances; ahead of Australia we had an Australian team who taught us about aboriginal crafts and how to play the didgeridoo, and we had a barbecue on deck with Aussie dishes, including, alas, kangaroo!

4) Special events. The World Cruise features special happenings, some wacky, like the Crossing of the Equator Ceremony with new crew members who have never crossed the equator being brought in as “prisoners” to await the judgment of ship’s officers and King Neptune after they kiss a big fish (thumbs up: they remain by the pool, thumbs down: they get dunked); and some events quite delightful like the “Beach Party” we enjoyed one year while in Australia, complete with real sand by the pool, beach toys, and three authentic lifeguards from Sydney; and the Mariner Appreciation Days with complimentary beverages (as you can imagine this occasion is very well attended!) and canapes during sail away and other happenings.

5) Celebrities. The world cruise typically features well-known entertainers and personalities. On some of ours we have had Archbishop Desmond Tutu of South Africa, singer Melissa Manchester and comedian Rita Rudner among other headliners.

6) Celebratory balls. During these gala occasions the band plays, the lounges and dining room are festively decorated including lovely floral arrangements for the Valentine’s Day Ball. On these occasions, the officers make a receiving line to greet passengers and guests dress up and dance the evening away.

7) The camaraderie. Being on board a ship with others for more than 100 days develops a certain camaraderie – a feeling that we are “all in the same boat”—and have respect for each other even if there are any perceived quirks and eccentricities – and that indeed we are all achieving something big together: circumnavigating the globe.

8) A hand-picked staff. The line puts on the best of the best on the world cruise and they go out of their way to make you feel happy and at home.

9) More amenities. These include things like special port welcomes at various ports of call with local folkloric groups. More themed nights with decorations and special menus in the dining room. And things like a special sandwiches-made-to-order station at the Lido buffet, more menu offerings in the Lido, complimentary shuttles to the city in ports of call, and more enrichment lectures.

10) Commemorative pillow gifts. These have included zippered tote bags with hand-sanitizer and other items, travel journals, Delft china dishes with the voyage itinerary marked, carry-on luggage and more.

A Grand Entrance for Celebrity Edge

For the first time, Port Everglades Terminal 25 has a tenant: Celebrity Edge. The newest ship in Celebrity Cruises fleet sailed into Fort Lauderdale, FL, yesterday, her new home for cruising to the Caribbean. It took the ship 15 days to sail across the Atlantic Ocean from the French shipyard where she was built.

After Celebrity Edge pulled into her berth for the first time, Lutoff-Perlo and Fain hosted a grand opening ceremony in the revolutionary new terminal. Attended by key brand executives and officials from Broward County and City of Hollywood, the exciting ribbon-cutting ceremony marked the official grand opening of the first terminal designed exclusively for the Celebrity brand, dubbed the new home of modern luxury.

Top 7 Things People Always Forget to Pack

The excited feeling of getting to go on vacation is something to be looked forward to; the day is finally here. All of the suitcases are packed, directions to the port are in-hand, passports and boarding passes are – wait, where are they?!? As that horrible sinking feeling of when you realize you forgot something while on vacation. The sense of dread and failure is real, as is the moment of complete relief when you find that yes, you did pack the passports and boarding passes. But what are those things that most people forget to pack? If it is the little things that count, then surely these top seven things that people forget to pack will always be on your next packing list.

1. Extra medicines

Whether it is heartburn medication, blood pressure, or diabetic pills, medications are the top thing that people forget to pack. Vacations are meant to last a certain number of days, but what happens if the cruise goes over with an accident or breakdown? Always take 4-5 days of extra medications just to be on the safe side.

2. Lip Balm and Lotion

These handy items are often stored in a purse or work-bag, but typically, most people don’t carry their work-bag while on vacation. Good handwashing and drier air can cause dryness, and of course, all that extra alcohol that you might be consuming on vacation is also going to dry you out. So moisturize those hands and lips!

3. Band-Aids and First-Aid Kit

Want to see sticker shock? Ask for a band-aid. No worries, the cruise ship will sell you a small pack at a 500% upcharge. To avoid this, pack a small ziplock bag of a few band-aids, antibiotic ointment, anti-itch cream, and wound cleanser. A mini first-aid kit from Walmart works well too.

4. Small Fan or Noise Machine

Noisy neighbors and running-in-the-halls children noises can be drowned out with a small fan or white-noise machine. Handy white-noise apps on your smartphone can also be used in a pinch.

5. A Belt

Want to see your partner glare at you when they are dressing for the elegant night – it’s simple. Just forget the matching belt for their formal outfit. *Hint* Don’t do it, just pack the belt.

6. Extra Underwear

You may be chuckling when you read this because most people pack way too much underwear. But if you have children, they typically use three pairs of underwear per day (unless they re-wear underwear!) Amongst starting the day, then changing for the beach, back to play clothes, then showering for dinner, swimming in the pool before bedtime, and another quick shower before bed. Yes, you definitely need to pack more underwear.

7. Calmness

Vacations are meant to be relaxing, but they can be anything but calm. So take a few moments while packing to set an intention to find moments of calmness and relaxation every day. By doing this, you are sure to enjoy the time away.

Windstar Announces $250 Million in Fleet Improvements

Have you ever wanted to be a little longer? If you’re a Windstar Cruise ship, you’re in luck! The luxury cruise giant announced a new $250 million initiative this week to increase the length of three of their vessels by more than 25 meters. The initiative will expand guest accommodations on the cruise line’s three all-suite vessels increasing capacity from 212 passengers to 312 guests per ship, following the lengthening.

For Ships, Size Matters

According to John Delaney, President of Windstar Cruises, increasing space and capacity will lead to a better guest experience. 

“We are thrilled to announce the $250 Million Star Plus Initiative, a significant investment in the future of Windstar Cruises. This exciting initiative is our 180 degree from ordinary solution to add new capacity and major enhancements to the guest experience in a very time efficient manner,” he said. “The initiative not only creates beautiful new suites and public spaces, but we will also take the opportunity to re-engine the ships with a more fuel efficient and environmentally responsible propulsion system. This will be a true game changer for Windstar and our small ship cruise experience.”

Windstar’s $250 Million Star Plus Initiative

The lengthening project is slated for Star Breeze, Star Legend, and Star Pride in succession between October 2019 and November 2020, and take place at the Fincantieri Shipyard in Palermo, Sicily, Italy.

Each Star Class ship will be cut to allow the installation of a new section of ship that will lengthen each vessel approximately 25.6 meters bringing the total length to just over 138 meters, still the right size to access the smaller ports and harbors that Windstar favors on the line’s immersive itineraries. The project adds 50 new suites, bringing the total number of suites per ship to 156, and represents an investment of more than $267,000 per passenger berth.

Improved Amenities and Performance

Also involved in the upgrade plans are state-of-the-art public spaces including two new dining locations; new shop and retail space; a much enlarged fitness center; and a new world-class spa.

The renovations also include a comprehensive engine improvement for each ship. Not usually found in the cruise industry, the upgrades involve the removal of seven current engines and installation of four new, more environmentally friendly engines that will run on cleaner fuel and reduce emissions impact to sailing regions.

Food To Thai Me Over

Thai food has long held a special place in my professed obsession with searching for ultimate culinary bliss.  It is definitely my ‘go to’ ethnic food. Who hasn’t felt the urge to make the phone call to your local Thai restaurant and order the quintessential Pad Thai, Tom Ka Gai or Chicken Satay.

But in Thailand, nothing screams “tourist” louder than ordering those imported versions of Thai comfort food.  It’s not that you shouldn’t order them but with hundreds of other exotic options, the question becomes, why?   I’ll be the first to say exotic might be a little too overstated but simply saying different doesn’t do the essential ingredients justice.  Let’s just say, it’s complicated.

Cuisine in the North

Chiang Mai in the north of Thailand is the perfect destination for a feeding frenzy of intrepid dining. Experiential travel is one thing but experiential grazing on foreign street food demands some degree of guidance. Choosing to experience a foodie’s night out with the organization, A Chef’s Tour was a master stroke in decision making.

The evening starts early in order to avoid any chance of the legendary street food vendors being sold out.  It’s not uncommon to find lines forming as early as 6 pm at the more popular hawker stands. Few locals actually eat at home and every bit of sidewalk space throughout the city is claimed by entrepreneurial cooks catering to the city’s hungry legions.

The organization’s resident food expert, Moui escorted us through this mine field of explosive flavors with minimal scorching of our wimpy westernized taste buds.  All the variations of why would you, how could you and did you really eat that, are put to rest with her insightful explanation of the region’s bounty of spices, vegetables and meats.  I’ll understate some of the graphic details but make no mistake, this is an intrepid food adventure void of any limited portion control so come hungry

The first stop is at The Cowboy Hat Lady’s stand, a local legend documented in several TV travel and food specials.  Her specialty is Khao Kha Moo, a braised pig knuckle resembling pulled pork, marinaded in her highly guarded recipe of spices and served over rice with a side of pickled greens and chili sauce.  This little free standing, street side kiosk serves up to 320 knuckles a day. Dividing that by four, simple math will tell you how many piggies went to market reluctantly donating their limbs to the cause (assuming that a pig has four knuckles).

Next stop, a fresh food market,  the ultimate tasting plate of knowledge.  Starting in the vegetable section Moui explains the applications, advantages and origins of anything and everything green.  Who knew that there are four different types of basil or that the appropriately named stinky fern could be used in omelettes.  Nibbling our way through the garden department, we take on the challenge of tackling the market’s spice segment.

Chilis of all kinds reign supreme but multiply the types of spices you can nam by ten and you will understand the complexity of Thai cuisine.  Navigating through the bustle of the market over to the pungent counters of fish, curry and shrimp pastes, there is no place for timid hesitancy.  The one word that keeps coming up is fermented. It is strange how using that term in wine production is revered, yet when you hear fermented fish, soybean or eggs the lips tend to be clenched.  Nevertheless, we are here to try foods, after which I attest to the previously mentioned, it’s complicated.

Let’s get to the meat of the story. Pork has become the most popular meat product as beef, lamb and even water buffalo are becoming expensive. What about chicken, you ask? Why of course, as KFC is the most popular fast food in Thailand. Here, they too do chicken right but we opt for a spicy minced water buffalo dish blended with water bugs, grub worms and fried crickets, which by the way would go well with a glass of Chang beer

After a fabulous sampling of sweets, desserts and fruits we move on to a “hot” night cafe specializing in Laab Moo, a spicy minced pork dish served with sticky rice.  Grab a pinch of the sticky rice, press down on the pork and the attached meat forms a perfect bite sized bomb of heat. With eyes watering and visible steam coming out the ears, Moui pulls out an assortment of sides she acquired at the market; a spiced up sausage, some grilled pig brain wrapped in banana leaf, (pretty good BTW) and some steamed water buffalo.

Next up, salads at an ethnic Burmese restaurant.  Fermented tea leaf salad, turmeric salad and penny wort salad.  Any sense of hunger has long been satisfied but the night is still young and it’s off to Chinatown for soup.  Cauldrons of steaming soups provide the next course. Chicken curry, chicken blood soup, vegetable soup and another whose Thai name escapes me as it is now entering our fifth hour of non stop eating.  

I’m fully aware that I may have overstated the weirdness factor for dramatic journalistic effect but suffice it to say that this was one of the most educational, fascinating food adventures I have ever been on and I’ve already booked my next A Chef’s Tour adventure for New Delhi in March.  Stay tuned for their take on Indian food.

Enjoy the Local Attractions

Pike Place Market

The essential Seattle stop for any visitor. Pike Place Market has been selling goods and food since 1907. It is the oldest farmers’ market in the country. You can pick up a breakfast sandwich or bakery item from the longest operating business at the Market – Three Girls Bakery. Plenty of goods and foods are on display for you to peruse. The famous flying fish are usually tossed around whenever a crowd starts to form. You can catch one of the fish if you ask nicely. Local performers provide free entertainment throughout the day. The best time to visit is early in the morning. By mid-morning, the Market is teeming with visitors.

Olympic Sculpture Park

The Belltown neighborhood is home to the Olympic Sculpture Park. The park is operated by the Seattle Art Museum and admission is free. Nine acres of art and green space are open for you to explore. A 2,500-foot pedestrian path leads visitors to a quiet beach area on the waterfront. Artists such as Mark di Suver, Alexander Calder, and Richard Serra have contributed pieces to this space. Olympic Sculpture Park provides a beautiful view of Puget Sound. If you are really lucky, you may even be able to glimpse the Olympic Mountains.

Dick’s Drive-In

This burger joint is a mainstay of many Seattleites’ diet. They have been serving cheap eats since 1954. The menu is small and serves only hamburgers, cheeseburgers, fries, sodas, and milkshakes. If you want to eat like a local, try the famous Dick’s Deluxe burger. This well-done burger is served with mayonnaise, chopped pickles, and lettuce. The local franchise has six locations throughout the area. You can have a huge lunch (or dinner) that will not break the budget. Remember, no substitutions!

Settle In For the Night

Ace Hotel

For a unique Seattle experience, book a room at the Ace Hotel. This trendy hotel is located in the Belltown neighborhood. It is only a 10-minute walk to Pike Place Market and Olympic Sculpture Park. The historic building offers guests plenty of budget accommodations with a little flair. The budget rooms have shared bathrooms, minibars, and televisions. If you are looking for more privacy, upgrades are available. These rooms feature a private bath, original artwork, and views of the waterfront. All rooms have free Wi-Fi too. 3 Unusual Ways to Break a Sweat on a Cruise

Hitting the gym used to be the only way to break a good sweat on a cruise vacation, but those days are over. As the health and wellness industry has embraced new disciplines, cruise lines have evolved, coming up with creative ways to make exercise feel like part of the adventure.

Here are some examples of unusual workouts to help you stay in shape while cruising:

Cycling

Going for a spin through hills and valleys on a ship? A partnership between indoor cycling studio FlyWheel and several cruise lines made it possible.

FlyWheel classes have become a phenomenon in major U.S. cities (and Dubai) by combining technology with an instructor-led high-intensity interval training. Cyclists can see their performance on a screen, in real time, and track their overall performance with an app.

You can find FlyWheel classes on Royal Caribbean’s Oasis of the Seas and Allure of the Seas, Celebrity’s Reflection, and Norwegian’s Breakaway and Getaway ships.

Another unusual way to ride a bike on board is SkyRide, available on the Carnival Vista. This ride challenges your lower body while giving you a bird’s eye view of the ocean and the deck, where the bike is suspended 150-feet above the sea. It was selected Best Onboard Thrill in our Editor-in-Chief Awards last year.

Exercise with City Tours

Those looking for a more familiar ride, on land, can hop on city bike tours. This type of tour has become popular among thousands seeking to experience new destinations in a different way.

Copenhagen, Amsterdam, Barcelona, Berlin, Dublin and Vancouver are famous for its city bike tours. You will certainly find bike rentals and even guided tours in these cities. But before, you might want to check with your cruise ship, as many carry bicycles on board that guests can use ashore to explore on their own.

Walking and running also make for great sightseeing workout tours. If you are more into running, check out the Site Running program on luxury line Crystal Cruises. An instructor will guide you on a 5-10k run through parks and past historical landmarks, not without warming up, hydrating and having healthy snacks. Some cities you can experience this way include Dubrovnik, Croatia; St. Petersburg, Russia; and Monte Carlo, Monaco.

Beach Boot Camp

Keeping the outdoor workout vibes, how about a beach boot camp for an extra challenge? Royal Caribbean provides such a challenge on its private islands Labadee and Coco Cay, to which you get aboard its ship Quantum of the Seas. Former NFL linebacker and Quantum Sports and Fitness Advisor Dhani Jones designed this boot camp, which features TRX suspension, battling ropes and kettle bells for a full body, sun-kissed workout.

Like these examples, there are many other ways to break a sweat on your cruise vacation. Research the cruise line’s fitness and entertainment offer after booking your cruise (or before, if this would be a deciding factor for you) to find exercise that motivates you. This will increase your chances of sticking with a workout routine without compromising fun on your trip.

Shaq Brings Great Food and Fun to Carnival

UPDATE: Carnival recently announced Big Chicken will be one of the dining options on board the new Carnival Mardi Gras!

He spent well over a decade dominating the hardwood courts of the NBA, but now international star of sport, film and music Shaquille O’Neal is setting his sights on a new endeavor, eating good at sea! Carnival Cruise Line announced that it’s newly transformed ship Carnival Radiance will feature Big Chicken, a restaurant inspired by the basketball star’s love of great food and a good time. The menu will feature a mouth-watering variety of fried chicken sandwiches and fries, with flavors to match Shaq’s gigantic personality, all included with the price of the cruise.

From Basketball to the Table

O’Neal opened his first land-based Big Chicken restaurant in Las Vegas in late October of 2018.  The onboard adaptation of Big Chicken featured on Carnival Radiance will be among the many food, dining and entertainment innovations incorporated into the 102,000-ton ship following a $200 million refurbishment in Cadiz, Spain, in 2020.

Christine Duffy, President of Carnival Cruise Line, explained why Shaq was the perfect partner for the onboard restaurant.

“Shaq has brought so much to our brand as Chief Fun Officer and we are always looking for ways to expand on this wonderful relationship and provide our guests with new ways to Choose Fun,” she said. “Knowing his passion for food and fun, we’re thrilled to work with Shaq to bring the first Big Chicken at sea aboard the totally transformed Carnival Radiance.”

The big man himself was excited to bring some more fun to an already awesome cruise ship.

“As Chief Fun Officer, I want to bring even more fun to every aspect of a Carnival cruise, including what guests eat,” said O’Neal. “Big Chicken has been a dream of mine and now that our land-based restaurant is open, it’s only natural to bring it to sea, as well. I’m really excited that Carnival Radiance guests will be able to enjoy my own delicious creations alongside all the other great food offerings on board.”

Big Chicken is among the many new culinary and beverage offerings that will be available on Carnival Radiance when it debuts in 2020.  Other outlets include Guy’s Pig & Anchor Bar-B-Que Smokehouse developed by Food Network star and longtime partner Guy Fieri, a classic American steakhouse called Fahrenheit 555, the Cucina del Capitano family-style Italian restaurant, and the Caribbean-inspired RedFrog Pub.  An expansive new WaterWorks aqua park featuring the new AquaTunnel slide as well as a SportSquare open-air recreation complex with a suspended ropes course will be added, as well. All of the ship’s staterooms will be renovated with a tropical color palette and striking new décor.

As she glides through the brilliant turquoise waters of Gardner Bay, there’s already a crowd forming along the top deck of Celebrity Xpedition. They’ve gathered for the sea lions.

Weighing in at around 600 pounds and prone to guttural barks and yelps, these salty dogs are a staple of any trip to the Galapagos Islands off Ecuador’s west coast. Lackadaisical is an appropriate word to describe the hulking masses as they roll around the beach chirping at one another, but they’ve certainly captured the attention of those on board the ship.

Excited for their first full day of adventure on board Celebrity Cruise’s 7-night Galapagos Outer Loop Itinerary, the group on board Celebrity Xpedition turns from the sea lions to examine their gear while attendants prepare the skiffs to head ashore. The real adventure starts with landfall.

It must have been quite the sight when the first of the 19 Galapagos Islands burst forth from the ocean enveloped in a cloud of steam and smoke, spitting smoldering chunks of molten rock high in the sky then crashing to the waves below. From amidst this utter chaos, these marvelous islands were born.

Millions of years later, the island chain’s tumultuous beginnings are evident everywhere you look. The landscape, scarred by eons of flowing magma, is home to life in all shapes and sizes, prevailing all these years despite the unpredictable volcanic environment. Famed naturalist Charles Darwin found never-ending curiosities in the flora and fauna unfettered by the destructive arm of humanity and the opportunity to follow in his footsteps is more an option now than ever before.

The Galapagos Outer Loop Itinerary from Celebrity Cruises tours the outer rim of the Galapagos Islands, making stops at 12 ports of call, each offering something new and exciting to explore. The voyage ends with a final stop at Puerto Ayora on Santa Cruz Island, home to the National Park Service Tortoise-Breeding Center and the Charles Darwin Research Station.

Dining with Virgin Voyages: It’s SeaLicious!

Oh yeah. Virgin Voyages’ Scarlet Lady is about to blow your notion of a traditional cruise right out of the water.

Last night, at an event at The Altman Building in New York City, a few of us got a taste (literally and figuratively) of the Virgin Voyages experience (not to mention a performance by rock legend Joan Jett to end the evening) and let me assure you, folks, it rocks.

Sure, we’ve already heard about Squid Ink, the industry’s first tattoo parlor at sea and how Cuba will be among the ports Scarlet Lady will visit during her inaugural season but last night, Tom McAlpin, president and CEO of Virgin Voyages had this group of jaded travel professionals cheering—no lie—as he announced the “rebellious twists” that will make Virgin Voyages “different by design.”

“No nickel and diming!”  That triggered the first cheer…and the happy roars increased in excitement and intensity as McAlpin revealed that Scarlet Lady will shatter the typical on board experience in some pretty significant ways.  Sodas and waters will be complimentary.  Fitness classes will be complimentary.  No assigned seatings.  No fancy dress.  No main dining room and no wasteful buffets!

That’s right!  No main dining room or buffet!  Instead, there will be 20 diverse eating establishments on board, some operating 24 hours a day and each with a bar located within the establishment.  The restaurants will include The Wake, a nautical spot at the stern of the ship featuring floor to ceiling windows, the “elevated Mexican” Pink Agave, The Pizza Place, the Italian Extra Virgin, the outdoor 24-hour Dock, The Test Kitchen, The Galley, the wildly wonderful, Razzle Dazzle (wait until you see the “hallucinogenic” design!) and many more.

And—get this—NONE of them will carry a pesky surcharge!

From the moment guests arrived at The Altman Building, it was obvious this was no staid little press event.  Strobe lights flashed.  Music pounded.  Artistically created hors d’oeuvres were offered and an open bar supplemented the champagne and wines being passed.  A scantily-clad young man lounged in a giant martini glass and, in the corner, a trio of mimes sporting bold black and white stripes posed with guests who wanted an op art commemorative of the evening.

Even the press conference that preceded dinner wasn’t the typical quiet affair.  Or maybe it was until the announcement of the Korean restaurant planned for Scarlet Lady brought McAlpin’s talk to a screeching halt as a gang of waiters appeared from nowhere bearing shots of a popular Korean drink.

If you’re a cruise veteran like me, you’ve been called to dinner by cruise director announcements, chiming bells and xylophones but I’m willing to bet you’ve never been called to dinner by a troop of drag performers who, through the evening would entertain us with slightly naughty music and humor.   Last night’s dinner—a tasting menu of the treats in store for guests at the flamboyant Razzle Dazzle—was a visual explosion of creatively styled dishes, drinks, desserts and, certainly, entertainment.  From the coconut milk infused rainbow sprinkled Fairy Bread to the crazy cobb salad intense with bacon and blue cheese, the whimsical chick-pea-za in its own little pizza box and the succulent fried chicken sandwich (or egg on English, a vegan selection) dishes were dazzling and delicious.  And the drinks…did I mention the drinks?  After the Filthy Bloody Harry, Yaaaasss Queen and the lovely wines served, it’s not surprising that I can’t remember.

And don’t get me started on dessert.  Pluck a rainbow churro from one of the umbrellas placed around the room, pick up a boozy chocolate cookie, or a tart ube (purple yam) ice cream cone!  Razzle Dazzle might be a healthy dining choice aboard Scarlet Lady (that can be made naughty with the addition of stuff like meats) …but based on the dishes I tried last night, you’d never know it!

Virgin Voyages promises to shake things up and break rules in cruise ship dining and last night they proved that not only will they do it, but they’ll do it in a very delicious way!

Ocean Cay Enters Final Phase of Construction

MSC Cruises’ private island is another step closer to completion. The first trees were planted on Ocean Cay this week, what was a sand extraction site, in preparation of the island’s opening next year. MSC Cruises is in the process of creating a sea bed around the island, which will soon be populated with vibrant marine life.

Ocean Cay’s Transformation

The island’s clean-up process was quite expansive, with over 500 tons of industrial waste and scrap metal removed. Sustainability is a big concern for MSC, who worked with the goal of creating a protected paradise and restoring the natural coral around the island. The cruise line worked closely with Bahamian environmental experts, environmental auditors and other entities to ensure the best environmental practices were followed during construction. Plans are also underway for a marine laboratory to be situated on Ocean Cay, which will research climate change-resistant coral in hopes of providing insights to similar island habitats.

MSC Cruises’ Executive Chairman Pierfrancesco Vago had a chance to visit the island and view it’s progress.

“It was a very special moment to be on the island together with the team that has been working non-stop on this incredible project to see how our vision is starting to take shape. Words cannot convey the unbelievable natural beauty of our island, and it is only when you have stood there for yourself, surrounded by nothing but beautiful ocean with nothing else on the horizon, that you can really understand what we are accomplishing here” he said. “I can’t wait to welcome in one year’s time our first guests to this truly magical place, a one-of-a-kind island experience that will set new standards for a private island experience in the Caribbean.”

Grand Plans for Ocean Cay

In order to create the lush, tropical paradise guests are expecting, adding 75,000 native shrubs and plants is in the works including more than 60 types of indigenous Caribbean trees, grasses, flowers and shrubs. Work on over 100 environmentally-friendly structures will also begin soon, which will include bars and restaurants as well as housing for employees and staff who will live on the island.

Ocean Cay MSC Marine Reserve will open November 2019 with four MSC Cruises ships calling at the island on different days. More information about the guest experience will be revealed in the coming months.
